Because of Mongolia’s harsh climate and short growing season, the availability of healthy vegetarian fare has been a serious problem for decades. In order to effectively convey the message of the original Edenic diet, it must be feasible to maintain such a diet, which is certainly not the case at this time. Although it is much easier to be a vegetarian now than it was 25 years ago, it is still not realistic to expect the average Mongolian to become a vegetarian even if he/she truly desires to, because of the financial factor. Maintaining a healthy vegetarian diet is simply too costly. Fruits and vegetables are more readily available now than at any time in the past, but because much of it is imported or grown in privately-held greenhouses, the cost is disproportionately expensive even for those considered to be in the middle class.\r\n

\r\nBy operating a farm/orchard and multiple greenhouse, GAC will be able to supply affordable, nutritious food for the school cafeteria, and encourage subsistence farming among the faculty, staff and students with the apportionment of individual plots. With the sale of surplus cash crops, GAC will also generate revenue for the school. GVS students who work at the GAC will gain valuable skills and experience which they can take with them upon graduation and implement in family gardens or in their own commercial endeavors.
